Beat the heat with this creamy, dreamy Mango Oats Ice Cream, a tropical treat packed with energy and health!
Ingredients:
- 1 ripe mango (peeled and chopped)
- 1/2 cup rolled oats
- 1 1/2 cups milk
- 1/2 cup chopped dates (soaked in warm water for 10 mins if hard)
- 1/4 cup almonds (chopped or slivered)
- 1/4 cup honey or maple syrup (optional, depending on sweetness)
- A pinch of cardamom (optional)
Methods:
- Cook the oats: In a saucepan, cook oats with the milk until soft and thickened. Let it cool.
- Blend the base: In a blender, combine the cooked oats, chopped mango, dates and sweetener (if using). Blend until smooth and creamy.
- Fold in almonds: Stir in chopped almonds (reserve some for garnish).
- Freeze: Pour the mixture into a container, cover, and freeze for 4–6 hours, stirring every 2 hours for a creamier texture (or use an ice cream maker)
